Quick & Easy – Spicy, Vegan, Gluten-Free Veggie Burger Tacos with a Mango Vinaigrette

Hey tacos,

Like you, I like my tacos to be quick, easy and yummy. Here is a SUPER easy step by step process to make these tacos. The reason I say, “step by step process” because this isn’t really recipe status haha… I did not study culinary arts. This taco is more for your convenience and all of the ingredients can be found at Trader Joe’s. Anyway, once you make these tacos you will be adding it as a meal at least once a week.

What you need:

  • Gluten-free corn tortillas
  • dr. Praeger’s California Veggie Burgers (found in the frozen isle)
  • Trader Joe’s shelled edamame (found in the frozen isle)
  • Red onion
  • Red pepper
  • Leafy greens (spinach, kale, etc.)
  • Carrot
  • Coconut oil
  • Cayenne
  • Trader Joe’s Sweet & Spicy Mango Vinaigrette

I didn’t specify how much you need of each ingredient because a lot of these items, come in bulk or you should add it judging by your personal taste preference AND again, I did not study culinary arts (so your better judging it on your own).

How to make 2 tacos:

  1. Slice a quarter of a large carrot into smaller bite-sized pieces
  2. Dice the red pepper and red onion (you won’t need a whole red onion and red pepper, but I found that it is nice to have pre-diced veggies, so you might as well dice both of the vegetables  for future meals)
  3. Add coconut oil to a large pan
  4. Place one dr. Praeger’s California Veggie Burger into the large pan
  5. Add the carrots and Trader Joe’s shelled edamame to the pan
  6. Sprinkle cayenne at your own risk 😉🔥
  7. Heat your 2  tortillas – I prefer putting them in my toaster oven until they are warm
  8. Check the burger to see if it is cooked (aka it is thawed out and warm enough to eat)
  9. Place your 2 tortillas on a plate
  10. First add your leafy greens (I personally did 3-4 leafs per taco)
  11. Take half of your veggie burger, break it into 4 pieces and place it on top of the spinach of one taco – repeat for second taco
  12. Add the carrots and edamame to the tacos
  13. Sprinkle the diced red onion and red pepper.
  14. Drizzle Trader Joe’s Sweet & Spicy Mango Vinaigrette to your liking
  15. Sprinkle cayenne at your own risk 😉🔥
  16. Fold it up and take a bite!

It’s a lot of little steps, but it honestly only took me 20 minutes to prepare. I suggest shopping at Trader Joe’s for your ingredients.

Remember…

  • You can switch out ingredients to make this personal to your taste buds! If you don’t like mangos, try a teriyaki sauce or a different vinaigrette. It’s all up to you, dude.
